Mama Miller's Homemade Vegetable Garden Soup

The soup my mother made last night was delicious! The cold winter afternoon inspired us to make homemade soup with the vegetables that were already in our fridge.
When I was growing up, my mother would tell me wonderfully detailed stories of her childhood. Being Portuguese, my mother's childhood was filled with delicious meals. They were abundant in fresh vegetables from her grandparents garden and rich flavors! I love hearing how at her grandparents house, there was always a large warm pot of soup on the stove, ready to serve and enjoy. This tradition is something that my mother has done a great job carrying on.
This recipe is a great way to get your creative juices flowing and let your taste buds guide you!

Ingredients
3 cartons (32 ounce)- Low Sodium Vegetable Broth
8 ounces - Pre-cut Chipped Carrots
4 ribs - Celery, sliced
1 - Yellow Onion, chopped
1 Whole or Bag - Cauliflower, cut to size preference
2 - Yellow Zucchini, cut to size preference
1 tbs - Avocado Oil
1 can diced tomatoes
2 can white beans
ANYTHING ELSE YOU WOULD LIKE TO ADD!
Tools
1 large pot or dutch oven, we used our Cuisinart 7 qt Dutch Oven
Favorite cutting knife, mine is the Santoku 7inch kitchen knife
Bowls to temporarily store chopped vegetables, my mom uses her traditional pyrex bowls
Spoon to sauté the celery, onion, and carrots
Soup ladle
** This recipe serves my household of 3 with some left overs. This recipe would serve about 6 people. Adjust recipe accordingly to your or your family's appetite. **
Step 1: Let’s Get Started
The first step Mama Miller takes when making this recipe is gathering all of her tools needed and ingredients together.
This allows us to double check that we have everything we need and have time to make changes if needed.
Step 2: Prep the Vegetables
When chopping the vegetables, we like to cut them into medium size chunks. The finer you make the chunks, the quicker it will cook and become soft; the thicker you cut the chunks, the longer it will take to cook.
Whatever your preference is on this, go for it! Cooking should be all about what makes you happy. :)
Step 3: Sauté the Vegetables
Heat up the pot you went with and add a drizzle of your favorite oil to cook with. My oil of preference, if I cook with any is avocado oil.
Once the oil heats up a bit, add in the celery, onion and carrots. Add in the seasonings and sauté until onion turns a golden color.
Step 4: Add the liquids!
This is when we added the can of diced tomatoes and the low sodium vegetable broth.
Bring the soup to a boil.
Step 5: Everything else, add it in.
Any other vegetables, beans, etc that you would like to add, this is your chance! This is where we added in the zucchini, and cauliflower.
Lower burner to a simmer.
FINAL STEP: Add the Kale!
At this point, prior to adding the kale, my mother check the flavor of the soup again to see if there is any modifications she would like to make. Whatever your tastebuds are telling you it needs, go for it!
Add the kale and let the soup simmer for about 15 more minutes. Check the kale and see if it is at your preferred tenderness. Once kale is done, you are good to go.
Serve and Enjoy!
